Instructions

BASE

  1. In a food processor, mix the ingredients for the pecan pie base. Mix until it resembles a sticky crumble.

  2. Line a 8 – 9 inch loose tart pan with parchment paper and butter it well.

  3. Press the pie dough into the pie dish together with your hands. Use the back of a teaspoon to smooth the underside of the crust and edges. Trim the highest off the edges with a pointy knife to get a clean edge.

FILLING

  1. Preheat the oven to 340F / 190C / 170 fan.

  2. Add the butter and sweetener to a small non-stick pan. Melt over a medium heat.

  3. Fill a small bowl with ice and cold water.

  4. Cook for five minutes to thicken then add the cream. Cook for an additional 5 – 6 minutes on a low heat until you get a pleasant caramel. Add salt, vanilla and cinnamon (off the warmth) then whisk with a until smooth.

  5. Place the new pan with caramel over the bowl crammed with iced water (this may stop the caramel cooking further). Allow to chill for about 3 minutes. Stir the chopped pecans through caramel sauce.

  6. Once the caramel is cool (it will possibly still be a little bit warm but shouldn’t be hot to stop the egg splitting) add the egg and whisk again until smooth.

  7. Add caramel filling to the pie crust. Decorate top with whole pecans.

  8. Cook for 35 – 45 minutes until golden brown. If the crust starts to brown too quickly after about 20 mins you’ll be able to loosely cover with a sheet of aluminum foil. Allow to chill before slicing. Serve with cream or sugar free whipped cream.
