Part candy, part cookie. Perfect for afternoon snacking or dessert. Once considered a luxury, shortbread was reserved for special occasions including Christmas and Recent Yr’s. This updated recipe owes nothing to its Scottish roots, aside from butter, and maybe the penchant for celebration. Almond & coconut flours create an ideal base for the creamy peanut butter and wealthy dark chocolate topping, while the dash of espresso gives your palette something to experience.

Low-Carb Chocolate Peanut Butter Shortbread

Ingredients

    cup
    almond flour
  • ½
    cup
    coconut flour

  • cup
    butter
    melted
  • 1 ½
    tablespoons
    maple syrup
  • 1
    teaspoon
    vanilla

  • teaspoon
    salt
  • 1
    cup
    peanut butter
    warmed
  • 6
    ounces
    85% dark chocolate
  • 1
    tablespoon
    coconut oil

  • teaspoon
    espresso
  • ¼
    teaspoon
    flakey sea salt

Instructions

  1. Preheat oven to 325 degrees.

  2. Line an 8″ square baking pan with parchment.

  3. Pulse almond flour, coconut flour, butter, maple syrup, vanilla and ⅛ teaspoon salt in processor, until well combined.

  4. Press dough into the underside of prepared pan, ensuring an excellent layer to the sides.

  5. Bake quarter-hour, until golden.

  6. Remove to chill.

  7. Meanwhile, break apart chocolate into small pieces.

  8. Set a double boiler over medium heat. **

  9. Add chocolate pieces, coconut oil and espresso, stirring occasionally until melted.

  10. Once cooled, spread warmed peanut butter over shortbread.

  11. Top with melted chocolate, spreading evenly.

  12. Freeze for five minutes.

  13. Top with flakey sea salt, returning to freezer until set, about 25 minutes.

  14. Remove parchment sling from pan, slicing shortbread into 16 uniform squares.

  15. Store refrigerated in an airtight container.

Recipe Notes

**When you would not have a double boiler, simmer just a few inches of water in a medium saucepan, fit a glass bowl inside, ensuring water doesn’t enter the container.
