Instructions

  1. Preheat oven to 350 degrees.

  2. In a stand mixer, add the eggs, Swerve, pumpkin, butter, vanilla extract and vanilla stevia until smooth.

  3. Whisk the salt, pumpkin pie spice, baking powder, coconut flour, flax and sunflower seed flour.

  4. Pour the dry into the wet ingredients within the mixer. Mix until smooth.

  5. Pour within the chocolate chips and stir on low.

  6. Use a cookie scoop and make 24 cookies.

  7. Place on a greased baking sheet or lined with parchment or silpat.

  8. Bake 20-22 minutes.

  • For those who haven’t got Swerve sweetener you may as well use one other sugar free sweetener like Sukrin Gold which is a brown sugar sub. I might use only ½ cup of one other sweetener since Swerve is far less sweet than most other granulated substitutes.
